This Valentine’s Day skip the artificial red food coloring found in many of the sweets and treats out there and dye desserts red the natural way–with beets!
I’m proud to present these beet powder cupcakes just in time for Valentine’s Day!
Beets were a staple for my parents who grew up in Poland, so pickled beets and beet soup were always around the dinner table for me as a child, especially during the holidays. I remember thinking beet soup was blood…ekk! To my mother’s dismay she could never get me to eat beets in any way, shape or form. Fast-forward to now and I’m putting beet powder in my cupcakes! What a difference a couple years and a an education in nutrition make!
This recipe incorporates Live Glean beet powder (Learn more about their products, hint: pumpkin flour here), cocoa powder, coconut oil, and a little bit of sugar to bring you bright red cupcakes that are free from artificial coloring or dyes. I won’t lie to you, they do smell and taste like beets! Once you take a bite, I think you will be surprised at the uniquely delicious earthy taste and moist texture. You can frost them with vanilla frosting that is also free from dyes and colorings. Simple Mills makes a great one you can find at Whole Foods.
You Can’t BEET Their Nutrition
The best part of incorporating this vegetable flour is that you’ll be adding a kick of nutrition to your cupcakes. Beets are a great source of many vitamins and minerals like iron, and B12. They also contain nitrates which are powerful vasodilators in the blood, needed to maintain normal blood pressure.
