Although I’m not Irish, I can definitely get behind green foods for St. Patrick’s Day! Minus your typical shamrock shake, that is. Sorry I’m not sorry! But don’t worry because I’m showing you how to make a way better version at home that’s a perfect green breakfast or post workout snack especially this week if you’re feeling festive.
I say getting into the spirit of all things green is the perfect time to challenge yourself to eat more greens in general. Whether that’s adding a handful to a smoothie or baking them into your desserts. Watch the clip from my segment on The Jam yesterday, and continue reading to get all the details on the food I showed! So whether you’re going to see the river turn green here in Chicago or hitting up a house party, do yourself a favor and make sure you at least on thing that is naturally green! Green beer absolutely does not count!
Green Foods for St. Patrick’s Day on The Jam!
Shamrock Shake Remake –skip that typical shamrock shake from you know where because one will set you back nearly 400 calories and has over 60 grams of sugar! That’s a shenanigan I have no desire to get into. Instead, make your own at home and green-ify it with spinach, that is chalk full of potassium, fiber, vitamin C and many other antioxidants. To get that fresh mint flavor, add fresh mint, or mint extract. I also blended in a banana, with almond milk and half of an avocado for that creamy green look and flavor.
Avocado Green Toast – I say green toast is a good idea no matter what time of year or day it is, but this is an especially good food idea for your St. Patrick’s Day brunch! One fun idea for a party is to have an avocado toast bar with different toppings like pumpkin seeds, eggs, arugula, and any other veggies. It’s sure to keep your guests full for a day filled with shenanigans because avocado is a good source of both healthy fat and fiber that keeps us fuller for longer. If you’re up against a morning of bloody Mary’s or mimosas, loading up on avocado will prevent you from reaching for those oh so salty bar snacks!
Power Green Salad – Their name says it all because with Eat Smart, you will indeed eat smarter! At times it can be hard to eat anything green throughout the day. I get it. With Eat Smart’s gourmet vegetable salad kits, all the work has been done for you. Their salads are chef-inspired and offer sophisticated blends of superfoods with toppings and dressings. And let’s face it sometimes having the same salad over and over can get a little boring! Rely on these kits to switch things up. You’ll notice in my segment, I jazzed up a corned beef sandwich with the superfood blend of kale, cabbage, and Brussel sprouts! Here too I added some to a sprouted tortilla with some smoked salmon for a quick lunch. Super great because I didn’t have to do any washing, or chopping because it’s all done for you!
They also recently launched Eat Smart Salad Shake Ups which are single-serve salads featuring a unique lockable lid for easy mixing, a sturdy fork and a deep bowl. When I first saw these I immediately thought about how great these would have been for me in college when I was running from class, to work, and back to class! How many times did I pack a lunch for class only to realize I forgot a fork! They come in fun flavors like avocado ranch, raspberry acai, and more!

Matcha Irish Soda Bread – A twist on a traditional St. Patrick’s day staple, matcha Irish soda bread kicks things up a notch when it comes to nutrition, plus it’s green! You know I love matcha, so I couldn’t resist adding 2 tbsp. to the batter of a Irish soda bread recipe I found online for an addition boost of antioxidants. It’s great to drink for it’s clean dose of caffeine, and even more fun to put into baked goods, smoothies and energy bites like these I made with matcha and pumpkin seed butter! Pro tip if you don’t have buttermilk (which you need for Irish soda bread) add 2 tbsp. of vinegar to 1 cup of milk! No, this does not work with almond milk..trust me!
Key Lime Pistachio Balls – These three ingredient green gems are super easy to make and filled with goodness and nutrition of pistachios. I really liked the tanginess from the lime juice, something that anyone who enjoys key lime desserts is sure to enjoy! Combine 1 cup of dates, and 1 1/2 cup pistachios in a food processor and pulse until combined, add the juice of 6 key limes and pulses until dough forms. Using a tablespoon or a cookie scoop, roll dough into ball and coat with 1/2 cup of chopped pistachio pieces. That’s it!
