FLIPPING FOR THESE! 🎃🎉

My pumpkin spin on the viral upside down pastry trend that make for the cutest little pumpkin cheesecakes! 🍂

recipe here!

4 oz. cream cheese
1/3 cup pumpkin puree
1/3 cup confectioners sugar
1 egg
1/2 tsp. vanilla extract
2 tsp. pumpkin pie spice or cinnamon
pinch of salt
honey

Preheat the oven to 400 degrees F. Combine all of the ingredients for the pumpkin cheesecake mixture and use a hand mixer to beat until smooth.

Cut the puff pastry into 9 squares per sheet. On a parchment lined baking sheet add about 2 tsp. of honey and then a dollop (about 1 tbsp.) of the pumpkin cheesecake batter. Then top with the puff pastry square and press around the edges with a fork. Repeat with remaining puff pastry and brush with an egg wash (1 egg white). Bake for 15 minutes, remove from the oven and let cool for a few minutes before flipping over. Dust with confectioners' sugar and enjoy!

for the crumble topping:

- 1/4 cup brown sugar
- 1/3 cup oat flour
- 2 tbsp. melted butter
- 1 tsp. pumpkin spice

Combine and use a fork to mix it up until crumbly. Sprinkle on top with 1-2 tbsp. pumpkin seeds before baking
