Save this for dinner inspo! 😍🎉 I can’t get enough of this Asian salmon bowl that literally comes together in less than 15 minutes! 👇🏻

For the salmon:
Cut wild- caught king salmon into cubes and toss in a marinade of 2-3 tbsp. coconut aminos (or soy sauce), 1 tbsp white miso, 1/2 tbsp. dijon mustard, and honey. Air fry at 400 for 5-7 min.

For the carrots:
Use a peeler to make carrot ribbons and toss with 2 tbsp. rice wine vinegar and 1 tbsp. toasted sesame oil. Top with sesame seeds or chopped green onion.

For the cucumbers:
I tossed them in about 1 tbsp. of store bought gojuchang sauce — so good!

This bowl is awesome with brown rice — this time I paired it with momofukugoods scallion noodles. Top everything with green onion & micrgreens! 🎉

Winter mood boosters! ❄️✨ What I do every single day to make sure I’m staying happy and energized during the long Chicago winter! 🥶👇🏻

❄️Movement every single day — > It’s amazing how just 10 minutes of exercise can positively impact you mentally and physically. It’s a must for me in the winter to feel energized for the day.

❄️Sunlight when there is some —> sunlight is incredibly powerful for our mood, hormones and circadian rhythm. Get outside in the morning when there is sun to help with energy, sleep, mood, and vitamin D production.

❄️Getting dressed and putting on makeup every day —> honestly this helps me so much in the winter!

❄️ gratitude practice —> focusing on what you’re thankful for can be a powerful perspective shift when everything feels “blah”. Start by writing down 3 things you’re grateful for in the morning and see how your day can totally change.

❄️ Not going too long between meals —> low blood sugar = low energy so don’t go too long between meals and snacks and make sure they’re balanced with protein, fat and fiber. This helps prevent that afternoon slump that seems to hit harder in the winter.

❄️ Omega-3 consumption —> think salmon, tuna and flax seeds. Diets high in omega-3 fatty acids have been linked to lower rates of depression.

All these plus more things I call my “winter non-negotiables” for feeling good this time of year on the blog now!
