Butternut Squash Pasta Salad with Pumpkin Vinaigrette

This butternut squash pasta salad with pumpkin vinaigrette is bursting with nutrition and fall flavor! Although it looks fancy, it’s easy to put together thanks to Cece’s Veggie Co!

Fall veggies are everywhere you look at the grocery store and with the holidays right around the corner, why not whip up this simple butternut squash pasta salad that’s as delicious as it looks?!

I love picking up a package of Cece’s Veggie Co when I’m at the grocery store because they truly shortcut adding a vegetable to your meal in a fun way –they’ve done the hard work for you!

I love these butternut squash noodles, often buy the zucchini noodles to have with marinara sauce, and use their riced cauliflower in dishes like this pumpkin cauliflower curry!

Since their products are riced, or spiralized or even ready to be eaten in soup form like their latest product, they make eating veggies more exciting! To be totally honest, I don’t love cauliflower but when I can get it riced, it seems more fun to eat it and I’m way more inclined to use it in different dishes!

As a dietitian, I’m always recommending these products as a way to add more veggies to your meals in a fun way, especially for people who are busy and don’t have time to prepare veggies. They can be eaten raw or cooked!

These butternut squash noodles that make up the base of this fall pasta salad and are a super fun way to reap the benefits of butternut squash, including more vitamin A, C potassium, and fiber. I love that they add a pop of color to any meal too!

Ingredients for Butternut Squash Pasta Salad with Pumpkin Vinaigrette

  • Cece’s Veggie Co. Organic Butternut Squash Noodles (Here in the Chicago land area you can find them at Whole Foods, Meijer and Target.
  • quinoa
  • brussels sprouts
  • pomegranate seeds
  • pumpkin seeds
  • tuscan kale
  • parmesan cheese
  • pumpkin puree
  • olive oil
  • garlic powder
  • mustard
  • apple cider vinegar
  • lemon
  • fresh or ground ginger
  • salt and pepper

How to Make Butternut Squash Pasta Salad with Pumpkin Vinaigrette

This salad is super easy to make! You can keep the whole thing raw, or sauté all of the ingredients together like I did! The dressing only require that you whisk the ingredients together!

The quinoa gives it some nice plant based protein and you’re getting lots of fiber plus more vitamins and minerals from the butternut squash noodles, Brussel sprouts, kale, pumpkin and pomegranate seeds.

This fall pasta salad is great for get togethers, as a Thanksgiving side dish, or as a great make ahead lunch for during the week.

Butternut Squash Pasta Salad with Pumpkin Vinaigrette

Fall salads just got a major upgrade with these butternut squash pasta salad with pumpkin vinaigrette. It’s easy to make, delicious and will remind you why fall veggies are the best! 


Scale

Ingredients

  • 1 package Cece’s Veggie Co Butternut Squash Noodles 
  • 1 cup quinoa, cooked
  • 1 bunch Tuscan kale
  • 1 1/2 cup shaved Brussel sprouts 
  • 1 tbsp. olive oil
  • 1/4 cup pumpkin seeds, toasted
  • 1/4 cup pomegranate seeds
  • 1/4 cup grated Parmesan cheese 

For the pumpkin vinaigrette 

  • 1/4 cup pumpkin puree
  • 1/4 cup + 2 tbsp extra virgin olive oil
  • 1/2 of a lemon, juiced 
  • 2 tbsp. apple cider vinegar 
  • 1 tbsp dijon mustard
  • 1 tsp. garlic powder 
  • 1/2 tsp. ground turmeric
  • salt and pepper to taste

Instructions

  1. Cook quinoa according to package directions.
  2. Wash, and de-stem kale. Set aside. Sauté shaved Brussel sprouts in olive oil until just warmed.
  3. Add butternut squash noodles, mix together until warmed. 
  4. Remove from heat and toss with kale and quinoa. 
  5. Heat a small sauté pan and add pumpkin seeds. Lightly toast, stirring frequently just until they are slightly browned (if you hear a popping noise this is normal!) 
  6. Add all vinaigrette ingredients to a small bowl and whisk together. Add more salt or pepper as necessary once you’ve tasted it.
  7. Top butternut squash noodle mixture with toasted pumpkin seeds, pomegranate seeds, and parmesan.
