This is me at my first apartment in NYC exactly 8 years to the date I moved to the city. I got my dream work opportunity and went for it having never been to New York before. 1392 on a bustling 79th street on the upper east side. 🚖

I cried a lot here -- was so homesick, felt so alone in a city full of people. Set mouse traps here. I also felt so much excitement for living here -- had good times and felt like my dreams were coming to life here.

For so long after coming back to Chicago I couldn't watch movies set in New York. Anything New York related felt like a reminder that I failed having ultimately realized it wasn't for me.

Being back 8 years later I can see that it wasn't failing at all. I think back to that girl 8 years ago and I'm so proud of her. She went. for. it. (sometimes I'm like who was she?!)

And I think I needed to be reminded of her now -- a reminder that you can do hard things and that anything that feels so meant for you won't always be easy. It will come with the ups, the downs and the inbetweens but will 100% be worth it.

And the question is never "can I do this?" because you know you are capable but rather can I learn from this and find the joy in it even when it gets hard? I know now that's the beauty of it. 🧡🧡

FIESTA EGG BAKE! 💃🏻🥑🎉 Another take on an egg bake that is absolutely delish!

Ingredients:
- eggs
- Mexican blend shredded cheese
- taco seasoning
- mini peppers
- mini tomatoes
- diced red onion
- jalapeño
- black beans
- avocado
- fresh cilantro
- salsa

Combine in an oven safe dish and bake for 10-12 minutes at 400 degrees depending on how you like your eggs. Top with avocado, cilantro, and salsa. Enjoy!

May is National Salad Month and I can’t get enough of all the fresh flavors, textures and colors in this spring salad made with sunsetgrown Wild Wonders tomatoes and terradelyssa Extra-Virgin Olive Oil in the lemon shallot vinaigrette.

Salad:
- 1/2 cup cooked farro
- 1/2 cup sunsetgrown Wild Wonders Tomatoes, diced
- 2 cups arugula
- 1/3 cup radish, sliced & halved
- 1/2 lb. asparagus, cut into pieces and sauteed until tender or blanched
- 1/4 cup shaved parmesan cheese
- 1 tbsp. fresh mint

Lemon Shallot Vinaigrette:
- 1/4 cup terradelyssa Extra-Virgin Olive Oil
- 1 shallot, finely minced
- 1 clove garlic, finely minced
- 1 tsp. dijon mustard
- juice of half of a lemon + zest
- salt and pepper to taste
