These healthy, no bake snickerdoodle energy balls are the perfect snack or healthier treat pumpkin treat! Made gluten and dairy free, and sweetened naturally with nutrient dense ingredients, you’ll love how delicious they are! They’re great to stash in your fridge for a fun snack in the fall!



  • 1 cup old fashioned oats {GF old fashioned oats if preferred} 
  • 3/4 cup creamy cashew butter
  • 1/3 cup pumpkin puree 
  • 1/3 cup maple syrup 
  • 2 tbsp. almond flour 
  • 3 tbsp. coconut flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon 
  • 1 serving {2 scoops/tbsp. collagen}
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt  
  • 2 tbsp. coconut sugar 


  1. In the bowl of a food processor, combine all of the ingredients except for the almond and coconut flour and coconut sugar.
  2. Pulse until a dough begins to form and you no longer see any oat pieces in tact.
  3. Add the almond flour and coconut flour.
  4. Pulse until combined, scrapping down the sides of the food processor with a spoon or spatula if necessary.
  5. Use a cookie scoop to portion out the dough. Use your hands to roll into balls.
  6. Dust with coconut sugar if desired or leave as is and enjoy! 


Store pumpkin energy bites in a sealed container in the fridge for up to a week.
