Healthy No-Bake Pumpkin Snickerdoodle Energy Bites

These healthy, no-bake snickerdoodle energy balls are a fun fall snack!  Made gluten and dairy-free, and sweetened naturally with nutrient dense ingredients, you’ll love having them stashed in the fridge to enjoy anytime! 


  • 1 cup old fashioned oats {GF old fashioned oats if preferred} 
  • 3/4 cup creamy cashew butter
  • 1/3 cup pumpkin puree 
  • 1/3 cup maple syrup 
  • 2 tbsp. almond flour 
  • 3 tbsp. coconut flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon 
  • 1 serving {2 scoops/tbsp. collagen}
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt  
  • 2 tbsp. coconut sugar or 1/2 cup mini white chocolate chips 


  1. In the bowl of a food processor, combine all of the ingredients except for the almond and coconut flour and coconut sugar.**
  2. Pulse until a dough begins to form and you no longer see any oat pieces intact.
  3. Add the almond flour and coconut flour.
  4. Pulse until combined, scraping down the sides of the food processor with a spoon or spatula if necessary.
  5. Fold in mini white chocolate chips if desired.
  6. Use a cookie scoop to portion out the dough. Use your hands to roll into balls.
  7. Dust with coconut sugar if desired and enjoy! Store pumpkin energy bites in a sealed container in the fridge for up to a week.


** Alternatively, you can also use oat flour and mix everything together with a wooden spoon.
