Ingredients

  • 2 eggs
  • ½ cup chickpeas 
  • ½ avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup feta cheese
  • 2 tsp. olive oil
  • 1 tsp. Italian seasonings
  • 12 tbsp. hummus (optional) 

 


Instructions

  1. Toss the chickpeas, avocado, tomatoes, feta, olive oil and Italian seasonings in a small bowl until combined.
  2. Fry the eggs on a greased skillet. Add to a plate along with dollop of hummus and enjoy!
