Whipped BEET feta dip made with lovebeets! 💕💕Perfectly PINK for spring and a delicious way to add more nutrition to an appetizer by way of beets! 🎉

I always have lovebeets ready-to-eat beets in my fridge for adding to salads, wraps, smoothies and fun dips like this! 💕 Beets are a good source of fiber, folate, potassium, antioxidants and more!

Today is also National Registered Dietitian Nutritionist Day and as a dietitian I love getting to create delicious and nutritious recipes with veggies like beets that hopefully add excitement and nutritional value to your food life. Because healthy eating does not have to be boring! 💯😘

Recipe:
- 1 8oz package cooked or pickled lovebeets
- 3/4 cup feta
- juice of 1 lemon
- 2 tsp. salt
- drizzle of olive oil
- fresh dill to garnish
- pine nuts to garnish

Combine all of the ingredients into a food processor and pulse until combined — about 2 minutes. Transfer to a bowl and garnish with a drizzle of olive oil, fresh dill and pine nuts — enjoy!
