If you’re following along on Instagram, then you know this week is pumpkin week where I’m partnering with Libby’s to bring you 5 new pumpkin recipes just in time for Thanksgiving! One of the reasons I love cooking and baking with pumpkin SO much is that you can do so many different things with it. From sweet to savory, the pumpkin possibilities are truly endless making canned pumpkin a definite pantry staple I recommend keeping in your pantry year-round.

I’ve never made my own pumpkin butter before which is why I’m excited to share this simple and unique pumpkin butter recipe. It basically makes itself on your stove and fills your home with the delicious scent of fall as it simmers.

This pumpkin butter recipe uses an entire can of pumpkin puree. Libby’s 100% Pure Pumpkin is what I use in all of my pumpkin recipes –they’re the only ones I trust when it comes to pumpkin puree because they’ve been the leading producer of canned pumpkin for generations.

Their factory in Morton, IL is 100% landfill-free. They are able to achieve this by recycling pumpkin by-products and incinerating the remaining waste for energy recovery. Pumpkin waste, like rind and skin, finds new life as land-applied fertilizer—except for the seeds—those are sold for wild squirrel food.

It’s nice knowing that the process of harvesting a vegetable that can be used in so many different ways is also finding many different ways to ensure as little waste from that process as possible. I’m happy to see that the whole process is one that aims to be sustainable.

Ingredients for Homemade Pumpkin Butter

  • Libby’s 100% Pure Pumpkin — this pumpkin butter recipe will use the entire can of pumpkin puree. I love using Libby’s in all of my pumpkin recipes because it’s 100% pumpkin!
  • Apple Cider
  • Honey – I like using honey to sweeten my recipes anytime I can because honey is just honey!
  • Lemon Zest — lemon zest will add brightness to the flavor of this pumpkin butter. I think it complements the flavor of pumpkin so well.
  • Fresh Ginger — fresh ginger adds a bit of zest to this pumpkin butter helping to balance out the lemon and pumpkin pie spice.
  • Vanilla Extract
  • Pumpkin Pie Spice – if you don’t have pumpkin pie spice, you can definitely substitute cinnamon
  • Salt – you’ll just need a pinch of salt to help balance out the flavors in this pumpkin butter
