whole grain pumpkin protein waffles

Pumpkin protein waffles with cinnamon apples scream fall in all the best ways. Spiced to perfection, fluffy and packed with 10 grams of protein from pumpkin seeds (how perfect?!), you’ll love every bite!

One of my favorite things about the fall is crisp weekend mornings with extra coffee where you just sit around, relax, take things slow and have something pumpkin for breakfast. If you follow me on Instagram, then you know that I love putting pumpkin into just about anything and everything — not only it is versatile, it’s nutritious too!

You can’t go wrong with these pumpkin protein waffles that are perfect fall! Sweetened with NOW Real Food® Pumpkin Spice Liquid Monk Fruit for extra pumpkin flavor, and topped with maple syrup, pumpkin seeds, pecans and cinnamon apples — each bite will remind you of everything you love about fall.  I’m ready for breakfast (and the weekend) just thinking about them!

This waffle recipe gives you double the pumpkin goodness because not only are you getting vitamin A, C, E, potassium and fiber from the pumpkin puree in the recipe, you’re also getting a good serving of protein from NOW® Sports Pumpkin Seed Protein Powder

Pumpkin seed nutrition

Pumpkin seeds are small but mighty when it comes to nutrition! They are a good source of protein, fiber, potassium and magnesium (aka the calm mineral). Harnessing their power into protein powder is pretty genius in my opinion!

This pumpkin seed protein powder contains only that — pumpkin seeds! It’s a great option for those looking for a dairy-free, non-pea based protein powder that is corn free, soy free, egg free and sugar free and vegan. The possibilities for what you can do with it are endless. Aside from adding to these waffles, I’ve been loving adding to my pumpkin smoothies for more protein and pumpkin goodness!

Last year, I had the opportunity to visit the NOW headquarters near Chicago and see into their production facility where they’ve been making natural products for over 50 years!

I learned so much about their measures and standards to ensure excellence in quality for all of their products, which was truly unparalleled in excellence compared to any other brand or company that I’ve seen. I’m a huge fan of their supplements and oils, many of which make up my skincare and supplement routine and now I’m excited to incorporate this pumpkin seed protein powder into my routine also!
Be sure to also check out this pumpkin sugar scrub that I created with NOW essential oils last pumpkin season! Not only does it smell amazing, but it leaves your skin feeling super soft and smooth.
