I love a good orzo salad and this antipasto twist truly takes it to the next level! 😍 Save for Memorial Day weekend and anytime you need a fun pasta salad this summer. 💯🎉

Recipe:
- 1 cup orzo, cooked and cooled
- 1 can chickpeas, rinsed and dried
- 1/2 cup roasted red peppers, diced
- 1/2 cup sliced pepperoncini, diced
- 1/2 cup Kalamata olives , diced
- 6-8 slices prosciutto ,(bake slices in the oven for 10 minutes at 375)
- 1/2 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese + more for topping

red wine vinaigrette:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tsp. italian seasonings or dried oregano
- 1 tsp. minced garlic
- 3/4 tsp. dijon mustard
- salt and pepper to taste
