Roasted Garlic Pesto Pasta with Baked Salmon, Butternut Squash and Spinach

Ingredients

  • 1 package Knorr Selects® Roasted Garlic Pesto with Volanti Pasta

  • 2 cups spinach

  • 1 cup butternut squash (I used frozen in the recipe!) 

  • 4 salmon filets, 4-6 oz each

  • 4 Tbsp. olive oil 

  • 1 lemon, juiced 

  • 1 tsp. garlic powder 

  • 1 tsp. salt

  • 1 tsp. pepper

  • ½ cup parmesan cheese


Instructions

  1. Preheat oven to 415 degrees F. Cook Knorr Selects® Roasted Garlic Pesto with Volanti Pasta according to package directions.
  2. While the pasta is cooking season the salmon filets with olive oil, juice of the lemon, garlic powder and salt and pepper. Place in the oven for 15 minutes. 
  3. If using frozen butternut squash, reheat in the microwave. 
  4. Once pasta is finished cooking add the spinach and butternut squash to the saucepan and combine. Cook until the spinach is slightly wilted. 
  5. Remove salmon from the oven. Portion pasta with vegetables on to two plates and top with baked salmon. Sprinkle with parmesan cheese if desired and enjoy!
