Healthy no-bake pumpkin snickerdoodle energy bites are a fun and delicious fall snack! Made gluten and dairy free, and sweetened naturally with nutrient dense ingredients, they’re perfect to stash in your fridge and enjoy anytime!

Packed with pumpkin puree, and pumpkin spice, these pumpkin snickerdoodle energy bites will be your new favorite snack all fall long! Easily made by pulsing all of the ingredients together in a food processor (or simply mixing together in a bowl), they make for a delicious and nutrient dense bite to stash in your fridge for when the pumpkin mood strikes.

Inspired by this pumpkin snickerdoodle cookie recipe, these energy bites wrap everything we love about fall flavors into a fun to eat bite.

You can feel good snacking on these energy bites knowing they’re balanced in terms protein and fiber which will help keep you fuller for longer.

The added collagen and cashew butter gives each energy bites more protein and pumpkin puree gives each bite more vitamin A, C, E, fiber and potassium too. Oats are also a good source of fiber, helping to give these energy bites more staying power.

Pumpkin Snickerdoodle Energy Bite Ingredients

  • pumpkin puree
  • old fashioned oats or oat flour
  • almond flour
  • oat flour
  • unsweetened cashew butter
  • maple syrup
  • vanilla extract
  • pumpkin pie spice
  • cinnamon
  • unflavored collagen (optional)
  • coconut sugar (optional for dusting on top)
  • mini white chocolate chips (optional for folding into batter)

  • food processor
  • cookie scoop
  • mixing bowls

How To Make No-Bake Pumpkin Energy Bites

Making these no-bake pumpkin energy bites is super easy! All in all they should take you no longer than 15 minutes from start to finish.

  1. Combine – Add all of the ingredients to the bowl of a food processor.
  2. Pulse – Pulse to combine. A dough should begin to form. Keep pulsing until you can no longer see intact oats. You may need to scrap down the food processor with a spoon or spatula.
  3. Transfer the dough to a bowl. Add the dough to a mixing bowl.
  4. Fold in mini white chocolate chips if desired.
  5. Portion — Using a cookie scoop, portion out the dough. Use your hands to roll them into balls. The dough will be thick and sticky, but shouldn’t be so sticky that you can’t form a ball. Roll in coconut sugar if desired.
  6. Store & Enjoy — Store in an air tight contain in the fridge for maximum freshness and enjoy!

How To Store Your Energy Bites

These pumpkin energy bites are best stored in a sealed container in the fridge for up to a week. I haven’t tried freezing them, however I think that would also work if you want to save part of the batch.

Ingredients
  

  • 1 cup old fashioned oats {GF old fashioned oats if preferred} **
  • 3/4 cup creamy cashew butter
  • 1/3 cup pumpkin puree
  • 1/3 cup maple syrup
  • 2 tbsp. almond flour
  • 1 tbsp. oat flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1 serving {2 scoops/tbsp. collagen}
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 2 tbsp. coconut sugar or 1/2 cup mini white chocolate chips

Instructions
 

  • Add all of the ingredients to the bowl of a food processor except for the mini white chips or coconut sugar.
  • Pulse until a dough begins to form and you no longer see any oat pieces intact.
  • Pulse until combined, scraping down the sides of the food processor with a spoon or spatula if necessary.
  • Transfer the dough to a mixing bowl and fold in mini white chocolate chips if desired.
  • Use a cookie scoop to portion out the dough. Use your hands to roll into balls.
  • Dust with coconut sugar if desired and enjoy! Store pumpkin energy bites in a sealed container in the fridge for up to a week.

Notes

** Alternatively, you can also use oat flour and mix everything together with a wooden spoon.
