Healthy no bake pumpkin snickerdoodle energy bites are the perfect snack or healthier pumpkin treat! Made gluten and dairy free, and sweetened naturally with nutrient dense ingredients, you’ll love how delicious they are! They’re great to stash in your fridge for a fun snack in the fall!

Packed with pumpkin puree, cinnamon, and pumpkin spice, these pumpkin snickerdoodle energy bites will be your new favorite snack all fall long! Easily made by pulsing all of the ingredients together in a food processor, they make for a delicious and nutrient dense bite to stash in your fridge for when the mood strikes.

These pumpkin snickerdoodle energy bites go great with a cup of pumpkin coffee too! May I suggest this homemade pumpkin spice oat milk latte OR this Starbucks copycat pumpkin cream cold brew recipe?! Both are absolutely delicious and a perfect way to celebrate the season!

Inspired by this pumpkin snickerdoodle cookie recipe, these energy bites wrap everything we love about fall flavors into a fun to eat bite! I added collagen to my batch for extra protein and skin, nail and hair health boosting benefits.

You can also feel good knowing you’re getting more vitamin A, C, E and fiber and potassium in each bite thanks to the pumpkin puree! It truly is a fall superfood!

Pumpkin snickerdoodle energy bite ingredients

  • pumpkin puree
  • old fashioned oats or gluten-free old fashioned oats
  • almond flour
  • coconut flour
  • cashew butter
  • maple syrup
  • vanilla extract
  • pumpkin pie spice
  • cinnamon
  • unflavored collagen (optional) – my favorite one to use is this one from mindbodygreen
  • coconut sugar (optional for dusting on top)

  • food processor
  • cookie scoop

how to make no bake pumpkin energy bites

Making these no bake pumpkin energy bites is super easy! All in all they should take you no longer than 15 minutes from start to finish.

  1. Combine – Add all of the ingredients to the bowl of a food processor except for the almond and coconut flour.
  2. Pulse – Pulse to combine. A dough should begin to form. Keep pulsing until you can no longer see in tact oats. You may need to scrap down the food processor with a spoon or spatula.
  3. Add flours – Add almond and coconut flour. Continue to pulse
  4. Portion — Using a cookie scoop, portion out the dough. Use your hands to roll them into balls. The dough will be thick and sticky, but shouldn’t be so sticky that you can’t form a ball. Roll in coconut sugar if desired.
  5. Store & Enjoy — Store in an air tight contain in the fridge for maximum freshness and enjoy!

These pumpkin energy bites are best stored in a sealed container in the fridge for up to a week. I haven’t tried freezing them, however I think that would also work if you want to save part of the batch.

Ingredients

  • 1 cup old fashioned oats {GF old fashioned oats if preferred} 
  • 3/4 cup creamy cashew butter
  • 1/3 cup pumpkin puree 
  • 1/3 cup maple syrup 
  • 2 tbsp. almond flour 
  • 3 tbsp. coconut flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon 
  • 1 serving {2 scoops/tbsp. collagen}
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt  
  • 2 tbsp. coconut sugar 

Instructions

  1. In the bowl of a food processor, combine all of the ingredients except for the almond and coconut flour and coconut sugar.
  2. Pulse until a dough begins to form and you no longer see any oat pieces in tact.
  3. Add the almond flour and coconut flour.
  4. Pulse until combined, scrapping down the sides of the food processor with a spoon or spatula if necessary.
  5. Use a cookie scoop to portion out the dough. Use your hands to roll into balls.
  6. Dust with coconut sugar if desired or leave as is and enjoy!
