Healthy No-Bake Pumpkin Snickerdoodle Energy Bites

These healthy, no-bake snickerdoodle energy balls are a fun fall snack!  Made gluten and dairy-free, and sweetened naturally with nutrient dense ingredients, you'll love having them stashed in the fridge to enjoy anytime!

Servings 11 -12 bites


  • 1 cup old fashioned oats {GF old fashioned oats if preferred}
  • 3/4 cup creamy cashew butter
  • 1/3 cup pumpkin puree
  • 1/3 cup maple syrup
  • 2 tbsp. almond flour
  • 3 tbsp. coconut flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1 serving {2 scoops/tbsp. collagen}
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 2 tbsp. coconut sugar or 1/2 cup mini white chocolate chips


  • In the bowl of a food processor, combine all of the ingredients except for the almond and coconut flour and coconut sugar.**
  • Pulse until a dough begins to form and you no longer see any oat pieces intact.
  • Add the almond flour and coconut flour.
  • Pulse until combined, scraping down the sides of the food processor with a spoon or spatula if necessary.
  • Fold in mini white chocolate chips if desired.
  • Use a cookie scoop to portion out the dough. Use your hands to roll into balls.
  • Dust with coconut sugar if desired and enjoy! Store pumpkin energy bites in a sealed container in the fridge for up to a week.


** Alternatively, you can also use oat flour and mix everything together with a wooden spoon.
